Vegan “Egg” Fried Rice

Servings: 2

Ingredients:

200g Crystal brown rice, cooked
1 (100g) small firm beancurd/tofu, pat dry and scrambled
¼ teaspoon turmeric powder
½ teaspoon sesame oil
1-1½ tablespoons rice bran oil
salt and pepper, to taste
1-2 tablespoons finely chopped spring onion (optional)

Method:

  1. Marinate the scrambled tofu with turmeric powder, salt and sesame oil. Set aside for 10-15 minutes.
  2. Heat the rice bran oil in a wok over medium heat and fry scrambled tofu until lightly brown. Stir in the cooked crystal brown rice
    and season with salt and pepper. Fry about 2-3 minutes or until crystal brown rice is heated through. Sprinkle with some water if it is too dry.
  3. Add in the spring onion, mix well and serve hot.
     

 Tip

1. Crystal brown rice for frying must be cooked at least 2 hours in advance or the night before.

金玉满堂 Herbal Brown Rice with Sweet Corn

Ingredients:
有机糙米 Organic brown rice 1 杯1 cup
九层塔(干) dried basil flakes 1 汤匙 1 tbsp
岩盐 rock salt 1 茶匙 1 tsp
水 water 2 杯2 cup
生玉米粒 fresh and raw sweet corn 1/2 杯1/2 cup
米糠油 rice bran oil 4 汤匙4 tbsp
    Method:

-- 把有机糙米、水、九层塔和岩盐混在一起煮熟后,
   拌上生玉米粒和米糠油,即可食用
-- cook organic brown rice with water, salt and basil in a rice cooker, mix with sweet
   corn and rice bran oil and serve hot
